Easter Brunch Recipes for Family Fun


1. Fluffy Scrambled Eggs with Fresh Herbs


A classic brunch dish that’s easy to make and always a crowd-pleaser! Scrambled eggs are a blank canvas, so adding fresh herbs like chives, parsley, and dill gives them a refreshing, springtime flavor. You can also add a little cheese for extra creaminess.
 

Ingredients:
8 large eggs
1/4 cup milk or cream
Salt and pepper to taste
Fresh herbs (chives, parsley, dill, etc.)
butter for the pan


Instructions:
Crack the eggs into a bowl and whisk with milk, salt, and pepper.
Heat a nonstick pan over medium-low heat and melt a tablespoon of butter.
Pour the egg mixture into the pan and stir slowly with a spatula, allowing the eggs to form soft curds.
Once the eggs are nearly set, fold in fresh herbs.


Serve warm and enjoy!

 


Baked Cinnamon Roll Casserole


This sweet and comforting dish brings all the flavors of traditional cinnamon rolls without the hassle of rolling and cutting dough. Plus, it can be made the night before and baked in the morning, saving you time on Easter Sunday.

 

Ingredients:
2 cans of refrigerated cinnamon rolls (with icing)
3 large eggs
1 cup milk
1 tsp vanilla extract
1/4 tsp cinnamon
A pinch of salt

 

Instructions:
Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish.
Cut the cinnamon rolls into quarters and layer them in the dish.
In a bowl, whisk together eggs, milk, vanilla, cinnamon, and salt.
Pour the egg mixture evenly over the cinnamon rolls.
Bake for 30-35 minutes, or until golden brown and set in the center.


Drizzle with the icing provided with the rolls and serve!

 


3. Fruit Salad with Honey-Lime Dressing


A light, fresh side dish to balance out the richness of the eggs and cinnamon rolls. The honey-lime dressing adds a sweet and tangy note to the seasonal fruit.

Ingredients:
1 cup strawberries, sliced

Instructions:

In a small bowl, whisk together the honey, lime juice, and a few torn mint leaves.
Drizzle the dressing over the fruit and gently toss to coat.


Serve chilled.
