Recipes to Make on Cold Nights

So, the next time you’re craving a cozy dessert, consider baking these timeless favorites: Apple Crisp and Oatmeal Chocolate Chip Muffins. They’re not just treats—they’re small moments of grace, warmth, and joy that bring us closer to each other and to the simple blessings in life.

 

 

Easy Apple Crisp with Oat Topping

This easy apple crisp has a topping made with oats, brown sugar, cinnamon, and butter. It’s the best dessert for early fall. Within ten minutes of going in the oven, the scent will fill the air, 
and neighbors will invite themselves in and wonder aloud if there is any left!
Prep Time: 20 mins, Cook Time: 40 mins , Total Time: 1 hour, Servings: 4

Ingredients:
6 apples - peeled, cored, and sliced
2 tablespoons white sugar
1 ½ teaspoons ground cinnamon, divided
1 cup brown sugar
¾ cup old-fashioned oats
¾ cup all-purpose flour
½ cup cold butter

Directions:
Step 1: Gather all ingredients. Preheat the oven to 350 degrees F (175 degrees C).
Step 2: Toss apples with white sugar and ½ teaspoon cinnamon in a medium bowl to coat; pour into a 9-inch square baking dish.
Step 3: Mix brown sugar, oats, flour, and 1 teaspoon cinnamon in a separate bowl.
Step 4: Cut in cold butter with two knives or a pastry blender until the mixture resembles coarse crumbs.
Step 5: Spread over apples and pat down gently until even.
Step 6: Bake in the preheated oven until golden brown and sides are bubbling, about 40 minutes.
Step 7: Serve and enjoy!

Baker’s Note: I like to pour a little maple syrup over-top before baking in the oven for extra flavour!

 

 

 

While I love a good Apple Crisp, Muffins are my most favourite snack to have with a hot cup of tea or coffee. Here is a super easy and healthy muffin recipe that’s sure to impress family and friends.

 

Healthy Banana Oatmeal Muffins

Ingredients:
3 Bananas
2 Eggs
2 Cups Oats
1/2 cup Maple Syrup
Cinnamon to taste
pinch of salt
1 tsp Baking Soda
1/4 cup melted butter or avocado/coconut oil

Directions:
Blend all ingredients until smooth and add 1/2 cup of your favourite extras (choc chips, cocoa powder, blueberries, apples etc) into the mix before baking for an extra special treat.

Bake at 350 degrees for approximately 15 minutes and enjoy!
